The daily bill of fare at the Elmira Reformatory shows that the question of the serving and the variety of food has had careful thought. We quote from a recent report of the State Commission of Prisons, N. Y. “This institution has one of the best equipped kitchens in the State. It is kept scrupulously clean and the waste has been reduced to a minimum. A physician makes frequent inspections which include an examination of the inmates employed in the kitchen and mess halls.
